Work some magic on your mashed potatoes with mashed potato puffs! These loaded potato puffs will breathe some new life into your leftover mashed potatoes!
– 3 cups of mashed potatoes=4 MEDIUM potatoes.
– 2 large eggs.
– 1 Cup. shredded cheddar cheese.
– 2 tbsp. grated Parmesan.
– 2 tbsp. chopped parsley.
– 1 tsp. Salt.
– 1 tsp. black pepper.
– 1/3 Cup. sour cream, for serving.
_Step 1_Heat your oven to 400 degrees Fahrenheit.
_Step 2_Lightly grease the wells of a non-stick muffin pan with butter, or you can just spray it using a cooking spray.
_Step 3_Mix the eggs into a medium blender bowl and add in sour cream, mix well.
_Step 4_Mix the cheeses with chopped parsley till combined, then add the mashed potatoes, and mix again.
_Step 5_In the greased muffin pan, spoon the mixture into the cups.
_Step 6_Bake until golden brown on the sides of the cup for 30 to 35 minutes. Take out the oven and let it cool in the pan for 3 minutes. I prefer to eat them warm.
_Step 7_If desired you can serve with sour cream, or you can also sprinkle a little pinch of chili powder over each potato cup.
