1 3/4 cups Peanut Butter Chips, divided
3 tbsp. tablespoon butter
1/2 cup plain brick cream cheese, softened
2 cups of icing sugar
2 cups CHIPITS Semi-Sweet Chocolate Chips
4 tbsp. vegetable shortening, divided
Melt 1 1/2 cups peanut butter kernels and butter in a heatproof bowl over a pot of simmering water. Remove from fire. Let cool slightly. Beat in cream cheese, beating until well combined. Progressively whisk in icing sugar, whisking until smooth. Refrigerate for 15 min .
Divide the mixture into 1 Tbsp. fill and shape egg oblong shapes. Placing eggs on a baking sheet liined with parchment paper. Freezing about 21 min .
Meanwhile, melt the chocolate chips with 3 tbsp. shortening in a heatproof bowl over a pot of simmering water. Repeat this step with the remaining peanut butter chips and shortening in a separate bowl.
Using two forks, dip the eggs in the melted chocolate to coat them. Tap the forks lightly on the edge of the bowl to let off excess chocolate. Return eggs to baking sheet lined with parchment paper. Garnish with the melted peanut butter coulis. Refriigerate for 16 min .
