Bacon Cheddar Potato Cakes!!!

I love those recipes that we all grew up with, they are just too good to miss out on.

Simple and easy ! My whole family loves this recipe so much. If it were for them, I’d be making this every day! Give it a shot, you’ll love it!To Make this Recipe You’ Will Need the following ingredients:

YOU’LL NEED:

  • 3 Slices bacon
  • 4 C. cold leftover mashed potatoes
  • 2 Eggs
  • 1 Tsp. onion powder
  • 1/2 Tsp. salt
  • 1/2 Tsp. ground black pepper
  • 1 C. cheddar cheese, shredded

 

HOW TO MAKE:

1-Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon slices, crumble, and set aside.
2-Leave the bacon drippings in the skillet.
3-Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl; stir in the crumbled bacon and Cheddar cheese.
4-Form the mixture into 8 patties.
5-Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crisp on each side, about 4 minutes per side.
